The team at http://www.helensrecipes.com have different approaches to cooking. Today Lucy Jayne will be sharing her 1/2 day cooking wonder to create 4 family meals to eat later in the week. This method of cooking esures you get home cooked food without the fuss.

On todays Menu we have a Plate Pie, Cottage Pie, Bubble n' Squeak & Spaghetti Bolognese. These 4 meals use 2 core ingredients Mince & Potatoes.

Step 1) Peel & Chop 1Kg of Potatoes and put onto boil. You will be making mash potato with this later.

Step 2) Chop & dice 6 large white onions, fry off in 6-8 tablespoons of olive oil, take off the heat and place in a bowl to the side. Instantly add 3 tablespoons of sifted plain flour and mix so the onions absorb the flour.

Step 3) Now in the same frying pan, fry off 1kg of minced beef. Remember only cook a little at a time, once cooked put into the onion bowl.

 
 

Step 4) You will have all the juices of the mince in your frying pan, add some boiling water and 2 beef stock cubes and reduce slightly for a few minutes. You can also add a few glugs of red wine!

Step 5) Take all the ingredients and place in a deep sautepan with lid. Your mixture of mince & onions should now be covered at least half way with the beef stock juice from the frying pan.

Step 6) After 20 minutes into cooking you need to take 1/3 of the mince from the sautepan and put back into the frying pan, add 2 tins of plum tomatoes and simmer gently. Add a few sprigs of fresh basil if you have any. You could also add some sauteed mushrooms chopped finely and previously cooked out in a little oil and butter. Cook this for a further 20 minutes and voila you have you spaghetti bolognese mix (you will cook the pasta fresh on the night). Put this into a plastic container and let cool before you pop this into the fridge.

Step 7) Your potatoes should be ready to mash, drain and pop back in the saucepan. Add a good dollup of butter, some milk, a little cream if you wish and season well with salt and pepper. Leave to the side.

Step 8) Now to make the Cottage Pie, take 1/2 of the remaining mince mixture and pop into an oven proof dish. Now chop very finely 3 carrots, remember really fine as they are going in raw. Mix these carrots into the mixture and then top with as much mash as needed which should be about 1/2 of the mash potatoes.

Another dish done! leave to cool, refrigerate and eat within 5 days.

Step 9) Now for the platepie, take 2 sheets of ready roll shortcrust pastry, line a circular shallow dish with one of the sheets. Use a fork to prick a few holes in the bottom. Add the remainder mince ontop of this pastry, then add the other sheet on top. Pinch the sides of the pie together anduse a fork to make a pattern around the edge. Brush with egg yolk.

So close another dish complete, leave to cool, refrigerate and eat within 5 days.

Step 10) Now the Bubble n' Squeak. In a sautepan sweat off some 1 large leek in 2 tablespoons of water and a about 25g butter. Cook for approx. 5-8 minutes until softened and golden brown. Take off the heat and leave.

Step 11) Boil up some frozen peas and sweetcorn, once cooked drain and add to the leeks.

Step 12) If you like you can fry up some pancetta or lardons of bacon until golden crisp. Then add to the leek mixture.

Step 13) Add everything in your leek pan to the remainder mash potato. Season well. Once cool you can take small portions and using your hands make patties. Have a bowl of flour to hand and simply coat the patties and pat gently to remove any excess. You can freeze these individually or keep in the fridge.

The last dish is great served with Salmon Steaks, which are quick and easy to cook. You can cook the bubble n squeak in a little oil until golden.
